VegFest

For what it's worth, we had a great time at VegFest.  People were awesome.  It was a lot of fun and we enjoyed attending.  Israel has more vegans per capita than almost any place on earth so we thought something might click.  It was great to see all the support.  I can't say enough good things about what we experienced.  The world hasn't ended with COVID-19.  It's just that things are really changing.  I see what's happening in higher education:

Trends in the Near Term and an Emerging Concern for Higher Ed (insidehighered.com)

Think about it: Enrollment, COVID's impact on cognitive ability, you name it.  Many schools are making standardized testing optional.  It's different.  Administrators want learning to be online yet often still want big tuition money.  What is a product worth when it's all online?  Certificates are becoming more valuable and employers are looking for skills so they may not insist on a college education.  That's a big deal.  The Inside Higher Ed article delves into those changes.  It definitely gives me pause.

Meanwhile, over at Onion Maiden, they're making vegan cheese out of cashews.  It's different yet it seems to be working brilliantly.
